Coming from a recipe created by a restaurant owner from Aisne : Philippe Ponsinet (Au plaisir des Mets restaurant, In Bruyères et Montbérault), this velouté is made with soft bean from Soissons, onion, crème fraiche and white wine.

It can be savoured warm or cold and exists in two volumes: 100 and 50 cl.
