SOUP OF ASTERS AND SOUP OF SALICORNES
The maritime aster, also called pig's ear, is a typical plant of swamps and salty meadows. Its leaves are eatable either raw or cooked especially in young period (when their size varies from 5 to 20 cms).
Discover this plant through a soup which associates the slightly iodized taste of the maritime aster to the softness of the potato.
Called also "passe-pierre", this plant, which likes salt, grows naturally in Bay de Somme, on regularly covered by the sea grounds. Discover it in a soup. Completed by a spoon of crème fraiche, it will delight the gourmets' palate.
