PATE OF DUCK FROM AMIENS
The pâté of duck from Amiens, celebrated by Madam de Sévigné, was created in 1643.
Immortalized, the recipe was improved by the addition of pistachio nuts and foie gras. It confers it a quite particular subtlety. Served freshly, accompanied with a toast, with bitter-sweet cherries, it seduces the gourmets.
