SNAIL IN THE COURT-BOUILLON
Bred on the soissonnais soil in a totally natural environment, shell-less snails are cleaned, cleared then put in a court-bouillon. A second court-bouillon is only prepared to fill jars before sterilization.
The bred snail has a short life (5 months), which gives it a very tender flesh.
The Top: snails in court-bouillon in vacuum bag : After having removed the shells the snails are cleaned, manually moved, then cooked in vacuum bags. This cooking in vacuum bags allows you to obtain a "tender" snail very appreciated by the great chefs.
