How to cook (14 pers.) :
Beat the single cream in whipped cream and reserve in a cool place.
Beat the yolk eggs in a electric whisk with the very warm honey, mix the whole until complete cooling.
Mix both preparations.
Beat in the electric whisk the white eggs and then, put the caster sugar, mix 2 minutes more.
Mix eggs with the previous preparation.
Put in ramekins or in silicone moulds, then put in the freezer a complete night.
Melt delicately the chocolate, spread it using a spoon in several small heaps (to form tiles) over all the surface of a special cooking sheet of paper, then sprinkle of cocoa.
Put in the cool one hour long. Put them in a hermetic box in a cool place during a night with the fresh leaves of mint.
Before serving, Set this dessert on custard if possible in a soup plate, and decorate with the chocolate tile.
